Grey Oyster
Grey Oyster Mushrooms are also known by several other names, including Grey Pearl Oyster, Tree Oyster, and Indian Oyster. These names reflect the mushroom’s diverse cultivation and popularity across different regions.
Grey Oyster Mushrooms are recognized by their beautiful grey to lilac caps, which fan out like oyster shells, hence their name. They have a delicate, mild flavor and a tender texture, making them a versatile ingredient in a variety of dishes.
These mushrooms are not only delicious but also offer nutritional benefits. They are a good source of protein, dietary fiber, and various vitamins and minerals, including B-vitamins and potassium.
200g Grey Oyster Mushrooms, cleaned and sliced
1 tablespoon vegetable oil
2 cloves garlic, minced
1-inch piece of ginger, grated
1 bell pepper, thinly sliced
1 carrot, julienned
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1 tablespoon rice vinegar
1 tablespoon cornstarch (optional, for thickening)
Sesame seeds and green onions for garnish
2. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
3. Add the Grey Oyster Mushrooms and stir-fry for 3-4 minutes until they start to brown.
4. Toss in the bell pepper and carrot, continuing to stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
6. If desired, mix cornstarch with a little water and add it to the stir-fry to thicken the sauce.
7. Continue to stir-fry for an additional 2 minutes until everything is well-coated and heated through.
8. Garnish with sesame seeds and chopped green onions before serving.
